One Pan Wonder – Egg Roll in a Wrap

With the Lunar New Year coming up, I thought it would be fun to make an Asian dish to celebrate.
This easy recipe puts a modern spin on traditional Chinese flavors.
It starts with the Chinese aromatic trinity: garlic, scallion, and ginger. Remember that. Trust me, when you add those three to your dish, it’s amazing. It’s a cool chef trick to make Asian dishes ‘on the fly’. A few more veggies get added to the pan, along with soy sauce and sesame oil.
It all comes together pretty quick, so it’s a great recipe to make when you’re short on time.
Enjoy it over rice or in lettuce wraps.
My favorite part is that it can all be made in one pan!
Egg Roll in a Lettuce Wrap
Ingredients (serves 4):
- 1 lb. ground turkey
- 2 cloves garlic, minced (can use 1 tsp. dried)
- 1 piece ginger, minced (can use 1/2 tsp. dried)
- ¼ tsp. red pepper flakes
- ⅓ cup soy sauce
- ½ cup water
- 2 celery ribs, chopped
- 4 radishes, quartered
- 2 carrots, shredded
- 3 green onions, sliced thin
- 1 tsp. sesame oil
- Sliced green onion or cilantro for topping
- Lime wedges for topping
- Lettuce leaves for wrapping
Directions:
1. In a large nonstick pan, brown the ground meat well, about 5 minutes. Break pieces up and cook until a little crispy.
2. Then, add in the garlic, ginger, red pepper flakes and stir for 1 minute.
3. Next, add the soy sauce and water and scrape the pan to release all the crispy bits from the bottom of the pan. This is flavor! Let the liquid reduce till there is almost no liquid.
4. Add celery, radishes, carrots and cook until softened about 3-5 minutes.
5. Then, stir in the green onions and sesame oil.
6. Serve over a bed of rice or on a lettuce leaf. Top with more green onion, cilantro, and squeeze of lime if you have it. Enjoy.
