Tomato, Basil, and Feta Salad

A simple salad can make a meal. I always try and balance a green into the meal I make and cucumbers are my go to vegetable. I know my kids will eat them and they make me happy too.
Plus, a salad can bring an equilibrium to a meal. Eating something savory? A fresh snap of veggies can balance that out.
This is a quick and easy salad to set your meal off right.
Ingredients
· 1 cucumber
· 1 tomato
· ¼ cup crumbled feta
· 1 tbsp olive oil
· ½ tbsp red wine vinegar
· Salt and pepper
To Make
Dice your tomato and cucumber into chunks of the size of your choosing. In a bowl mix all the ingredients. Salt and pepper to taste. And that’s it. EAT!
