Whole Tomato Sauce

As I am sounding like a broken record, and I apologize for that, but I have lots of produce coming from the garden. My tomatoes are in the end of their run, but I do have them in abundance still. I also have a lot of carrots and bell peppers, so they make an appearance as well. At the risk of sounding too hoity toity but meals that you can make primarily from the food you grow just hit different.
So with all those tomato what better way to use them than salsa… I mean tomato sauce. Tomato sauce recipe, Connor. Tomato sauce. Sorry my mind always goes to salsa first, everything else second. This is a tomato sauce to pair with pasta. Dialed in quite a bit and my favorite homemade sauce yet.
Ingredients
- 1.5 pound of whole tomatoes
- 1 large carrot peeled and diced
- ½ bell pepper chopped
- 3 cloves garlic
- ¼ yellow onion diced
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp msg
- 1 tsp salt
- ½ tsp pepper
- 1 tsp rosemary
- 2 bay leaves
Combine all the ingredients except rosemary and bay leaves in a pot and simmer for 20 minutes. Blend. Add rosemary and bay leaves and simmer for another 20 – 30 minutes. In reality the longer the better. Serve with pasta and eat! (If you want to add ground beef or turkey, sear it in a separate pan and add in after blending)
