Roasted Sweet Potato
By Connor Forbes
I am having a really hard time coming up with something clever and fun to say about this dish. Usually, I like to start with a jazzy story about why I made it. But I don’t really have anything today, so I’ll jump right into the meat and sweet potatoes.
Ingredients
- 1 large sweet potato diced into cubes
- 2 shallots sliced
- 1 tbsp olive oil
- 1 tsp salt
Preheat oven to 425. In a bowl combine all ingredients and toss until sweet potato is evenly covered in olive oil. Spread the mix out over a baking sheet so that nothing is stacked on top of each other. Bake for 20 minutes. With a spatula carefully mix the ingredients on the pan and test for tenderness. If the potatoes or soft enough to easily squish you are done. Otherwise continue baking in 5-minute increments, checking each 5 minutes to see how they are doing. EAT!
I served these with pork chops and coleslaw. Quite a delicious and flavorful meal.
