Avocado Roll

My family is somewhat sushi obsessed. In college I was a double major in Geology and Japanese. My wife worked at a sushi restaurant. And my kids are avocado afficionados. With all those powers combined we have a deep love for sushi. And for my kids in particular, avocado rolls. They haven’t quite braved into the world of raw fish, but for our family finances sake, we are totally cool with that.

An avocado roll is very easy to make at home. It may take some practice to get it to stay together just right. But even if it is falling apart you will get the flavor every single time. 

Let’s roll!

Ingredients

·      Sushi Rice or other white rice

·      Rice Seasoning vinegar (optional)

·      Avocado, sliced

·      Nori seaweed sheet

To Make

Cook the rice to the directions stated on the packet. OPTIONAL – For a little extra flavor, mix in a tsp per cup of rice of rice seasoning vinegar into the cooked rice.

Lay a nori sheet flat on a cutting board, rougher side face up. Spread a layer of rice across the entirety of the nori sheet. Add avocado in a narrow strip about 1/3 of the way into the nori sheet crossing the entire sheet of nori. Grab the bottom of the nori and carefully lift and fold over the avocado in the direction away from you. Then roll the rest of the sheet of nori away from you until the roll is completed. Using a sharp knife that has been dipped or covered in water cut through the middle of the roll. Then cut through the middle of the 2 halves you made. And cut in the middle of the quarters. This will yield 8 pieces. Serve with soy sauce and enjoy!
