Cobb Salad

I love old Hollywood history. And one of my favorite stories is about the invention of the Cobb salad.

So, one night at the famous Brown Derby restaurant in Hollywood, the owner got hungry while closing up. But he didn’t have enough ingredients to make one dish. So, he threw together what he had in the kitchen and made this salad. And the friends he shared it with loved it.

So, the next day, they came back and asked for a “Cobb Salad.”

But why did they call it a Cobb? Because the owner was named Bob Cobb.

And that’s how the Cobb Salad was born!

Now it’s your turn to create some Hollywood magic in your kitchen!

Cobb Salad

Ingredients (4-6 servings): 

Dressing: 

●      1/3 c. red wine vinegar

●      1 tbsp. Dijon mustard

●      1 tbsp. honey

●      2/3 c. extra-virgin olive oil

●      3/4 tsp. kosher salt, taste and add more if needed

●      Freshly ground black pepper

Salad

●      1 head romaine lettuce, coarsely chopped

●      4 hard-boiled eggs, peeled and quartered

●      12 oz. cooked chicken, diced

●      8 slices bacon, cooked and crumbled

●      1 avocado, thinly sliced

●      4 oz. crumbled blue cheese

●      5 oz. cherry tomatoes, halved

●      2 tbsp. finely chopped chives

Directions

  1. Make the dressing: Add all ingredients into a jar to shake or whisk in a small bowl. Set aside. 
  2. Plate the salad:  Spread out lettuce, then add rows of hard-boiled egg, chicken, bacon, avocado, blue cheese, and cherry tomatoes.
  3. Drizzle with dressing, and garnish with chives.
