Grilled Potatoes and Onions

I was in Nebraska last week spending time at my mom’s house. She lives in a tiny town near Lincoln. Not so tiny it can be measured by a street or two. But very tiny in comparison to our small towns in Southern California. The town is surrounded by corn fields and the overall economy in Nebraska is agriculture based.

My mom isn’t the most enthusiastic cook in the world, though she knows how to make a nutritious and yummy meal. She is a steak and potato kind of gal. And being in Nebraska it felt right to have a steak and potato meal. I fired up the grill and made us a nice Steak and Potato meal, accompanied by broccoli and my go-to cucumber salad. It was the perfect meal to enjoy in the nation’s heartland. So, let’s get cooking!

Ingredients

  • 1 lb of red potatoes, quartered
  • 1 onion, cut into thick half moons
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

To Make

Preheat grill to 500° or so. In a bowl mix the potatoes and onions with the olive oil. Add salt and pepper and mix again. Lay the potatoes and onions in a vegetable tray or aluminum foil boat. Place on the upper rack of the grill. Cook for 15 minutes and mix. Cook for another 15 minutes or until potatoes are tender. Cooking time may vary depending on the thickness of your potatoes. Pull off the grill and add the butter to the hot potatoes to melt. Stir. And you are ready to EAT!
