Sautéed Spinach with Garlic

I feel like spinach is a fancy restaurant staple. Especially in steak houses. You know where they charge $15 for a side. A side of spinach! Granted it probably does take a mountain of spinach to produce that side, but c’mon. It’s spinach. 

I’m sure you would like to feel fancy yourself with minimal effort. I know I sure do. 

We have celebrated a couple of birthdays in my family this month. The go to meal I have made for both has been baked salmon (one miso glazed and one with lemon juice), mashed potatoes, and sauteed spinach with garlic. It is a very simple meal, but one you could imagine being asked to pay $20 dollars for at a restaurant.

Ingredients

  • 1 tbsp olive, split
  • 16 ounces of spinach
  • 5 cloves of garlic minced
  • Salt to taste

Directions

In a large pan over medium heat, add half of the olive oil and start adding spinach. Spinach will shrink down to an unbelievably small size when cooked so you will probably be adding a bit at a time and then adding more. Keep adding spinach as quickly as it will fit. Once all of it is cooked turn off the heat and add the garlic. Finish with the rest of the olive oil and add salt to taste. Give the garlic a minute to soften. Then you are ready to EAT!
