Cottage Pie
Cottage Pie is the epitome of a bone sticking meal. It takes a meat pie and adds a thick layer of mashed potatoes on top instead of a flaky crust. Both or excellent and hearty. But mashed potatoes will always take the cake in my book. It takes a few steps to make but it is not a difficult recipe.
It is not a crowd pleaser for my kids though. Which is a huge bummer. They don’t care for mashed potatoes for some reason. No matter how many times I tell them they are French fries in a different form. They just don’t buy it. We’ll call it a learning food for now but hopefully that changes in the future.
So, let’s make cottage pie.
Ingredients – Mashed Potatoes
- 2 pounds white rose, klondike goldust, or russet potatoes
- 6 tbsp butter
- 1/3 cup whole milk
- 1 tbsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- ¼ cup mozzarella
- 1/8 cup parmesan
To Make
Start the potatoes first.
In a large pot boil water. While the water is heating, peel the white rose potatoes. When the water comes to a boil, boil the potatoes until they are fork-tender, about 20-25 minutes. When fork tender, aka able to stick a fork in the potatoes and it slides in all the way easily, transfer potatoes to a large mixing bowl. Mash with a fork while adding in the milk, butter, salt, pepper, and garlic powder. Mix thoroughly.
If you like thicker or thinner mashed potatoes, use more or less milk.
Ingredients – Meat
- 2 pounds ground beef
- ½ cup brown onion, diced
- ½ cup carrots, diced
- ½ cup peas
- 4 cloves garlic diced
- 2 tbsp butter
- 1 tsp salt
- ¼ cup red wine (optional)
To Make
In a medium sized Dutch oven, melt the butter on medium heat. Add the onion and carrots and cook for 4 minutes. Add in the ground beef and sear. Once, mostly browned add in the peas, garlic and optional red wine and simmer for 4-5 more minutes.
Preheat the broiler in your oven. Make the meat evenly flat. Add the mashed potatoes over the meat and cover evenly using a spatula. Sprinkle the mozzarella and parmesan cheese. Broil for 5-10 minutes (depending on your broiler) until the cheese is brown and bubbly.
Pull out of the oven and let cool for a few minutes. Garnish with basil, green onion, and/or paprika and EAT!
