Easy Cheesy Potatoes

Who doesn’t love potatoes. In fact, the average American eats about 120 pounds of potatoes a year, according to the farmers almanac. It’s the most consumed vegetable in our diets far ahead of lettuce, number 2 on that list. And while I imagine a large amount of those pounds are consumed via French fries, there are so many ways to enjoy a potato.
I love potatoes just like the next person. And even though non-French fried potatoes are a tough sell on my kids, I keep trying. And this recipe was a winner for at least my older kid. So that’s a victory in my book.
Let’s make some easy cheesy potatoes!
Ingredients
- 6-8 red skinned potatoes
- 1 yellow onion (optional)
- 1 tbsp olive oil
- ¾ cup shredded cheddar cheese
- 1/3 cup water
- Salt and pepper to taste
To Make
Cube the red skinned potatoes into ½ inch cubes. Dice the onion. Heat a large skillet on medium heat and add the oil. Add the potatoes and mix into the oil. After a couple of minutes add the onions. Stir onions in. Add the water and cover. This will help steam the potatoes and make them soft and tender. Once fork tender, 10 minutes or so, remove the cover and let any remaining water to boil off. Add salt and pepper to taste and give one last stir. Add the cheese on top and let melt for a minute or two. Turn off the heat and enjoy!
