Prosciutto Wrapped Cantaloupe

This recipe is almost too basic to be a standalone recipe. But it is so good that it deserves the spotlight. And by good, I mean this is a make you week in the knees, close your eyes, and go mmmm hmmm hmmm.
I have successfully grown my first cantaloupes this year. It has been a gardening year of many firsts. First onions, watermelon, basil, leeks, etc. But maybe the most rewarding fruit has been the cantaloupe. This particular one was the third one I have picked and it was the best. The flavor and texture put it on a level that I have never experienced before. They do take up a lot of room, so if you want to grow your own and space is limited, I recommend growing up a trellis. Google “cattle panel trellis” to see the one I made in my yard.

Ingredients
· Slice of cantaloup
· Slice of prosciutto
· Balsamic glaze (optional)
To Make
Peel, seed and slice your cantaloupe longways. Take a slice of prosciutto and wrap around cantaloupe. Add balsamic glaze for an extra little pop and EAT!
