Sauteed Asparagus and Shallots

I went on a vacation to Joshua Tree with some family and we rented a house. Since eating out every meal is not ideal for your health or your wallet, we packed a ton of groceries. The kitchen is always a hit or miss affair in a rental, luckily this house was pretty solid in that department. We ended up cooking every meal and only eating out on the way there and on the way home. A big success in my book.
You don’t have to have a culinary degree (I don’t) to make restaurant quality food. You just need a few simple ingredients and a few minutes to spend. So let’s make a side dish that can go with just about any meal.
Ingredients
- Bundle of asparagus
- 2 shallots, sliced
- 1 tbsp olive oil
- ½ tsp salt
- Squeeze of lemon
To Make
Preheat a sauté pan on medium heat. Snap off the stem ends of the asparagus where they naturally break. Slice the shallots into ¼ inch slices. Add oil to pan. Place asparagus and shallots in pan. Cook for 4 minutes. Then flip. Add salt. Cook another 4 minutes or until asparagus is tender. Finish with a squeeze of lemon. Serve and eat!
