Slow Cooker Sweet and Sour Pork

My wife and I are expecting our 3rd child this summer and to make life a little easier we bought a slow cooker. This will allow me to prep a meal during nap time and let it make itself over the rest of the day. There are some classic slow cooker recipes, such as chili or shredded chicken, but I want to have a bit of an expansive repertoire, so we don’t get bored eating the same thing over and over again.
Sweet and sour pork hit the mark. It is a bit different than anything we normally eat. And very easy to make. Just set it and forget it.
Ingredients
· 2 lbs pork loin
· 1 bell pepper, diced
· 20 oz can of pineapple chunks in its own juice
· 1 yellow onion diced
· ¼ cup apple cider vinegar
· 2 tbsp soy sauce
· 3 tbsp brown sugar
· 1 tsp ginger minced
· Salt and pepper
· 2 tbsp cornstarch
· Green onion
To Make
In a crock pot combine all the ingredients. Cook on low for 6 hours or until pork can be pulled apart with a fork. Take 2 tbsp of hot sweet and sour sauce broth and in a bowl mix with cornstarch. Add back into the slow cooker to thicken and mix. Serve over rice or in between buns for a sandwich. Garnish with chopped green onion.
