Zucchini and Onion Stir-fry

One of my favorite foods is Korean BBQ.

Not only do you get good meat, but you also get a bunch of side dishes you can nibble on like kimchi, bean sprouts, spinach, cucumbers and more.

That’s actually one of my secrets for making a great meal. A side dish that compliments the main dish.

So here’s a quick side dish you can pair with almost anything.

I love it with a simple grilled salmon. But if you’re in a rush you can also have it with a side of rice or soba noodles.

Zucchini and Onion Stir-fry

Ingredients (for 1-2):

●      1 medium zucchini, sliced in half and quartered

●      ¼ onion, thick sliced

●      1 Tbsp. Soy sauce

●      1 tsp. oil

●      Dash of sesame seeds

Directions:

1. In a small to medium sauté pan, heat oil and add all chopped zucchini and onions at the same time.

2. When it starts to sizzle lower heat to a medium. Cook until zucchini is fork tender but not too mushy about 7-10 minutes. Stir often. Add soy sauce in the last minute or two of cooking so it can evaporate a bit. Mix frequently while cooking.

3. Add a dash of sesame seeds right before serving.
