I am always on a quest for new and easy sides to make for my family. I always try to put a green, a starch, and a protein on their plates. And one of my favorite vegetables growing up and today is zucchini. There is something about the texture of a meaty zucchini with a soft and pull apart inside. The flavor is rich and earthy and will take on flavors that you cook it with. So I will keep this recipe to the simplest of ingredients, but as with all my recipes, experiment with different seasonings to see what you really connect with. Let’s make zucchini.

Ingredients

  • 2 zucchinis, ¼” slices
  • 1 tbsp olive oil
  • Pinch of salt
  • Pinch of pepper

To Make

In a bowl combine the zucchini slices, olive oil, salt, and pepper, and mix thoroughly. On a stovetop heat a pan over medium high heat. Let the pan heat for 2-3 minutes. Add in the zucchini to the pan taking care to have as many zucchinis as flat as possible on the pan to get a good sear. If you have a smaller pan, you may want to cook in batches. Cook for 5-7 minutes undisturbed, then flip. Cook for another 5-7 minutes or desired tenderness. And Eat! I served these with hamburgers.
